The vineyards of Chablis grow on the slopes of a tributary of the Yonne river, the Serein.
The Chablis terroir (kimmeridigie, fossil oysters), the chardonnay and a colder climate than the average Burgundy climate give dry wines with a lot of freshness and mineralilty.
The four appelations are: Chablis Grand cru, Chablis Premier cru, Chablis, Petit Chablis.
Village of Fixin: Red wines only, under the appellation Fixin.
Village of Brochon: Appellations: Gevrey Chambertin and Côtes de Nuits Villages.
Village of Gevrey-Chambertin: 13 kilometers from Dijon. There are the ruins of a castle that once belonged to the Cluny abbey. The following Grands crus are produced there: Chambertin Clos de Bèze, Chambertin, Charmes-Chambertin, Chapelle-Chambertin, Griotte-Chambertin, Latricière-Chambertin, Mazis-Chambertin, Ruchottes-Chambertin.
Village of Morey Saint Denis: It produces four red Grands crus: Bonnes Mares, Clos Saint Denis, Clos de la Roche, Clos de Tart.
Village of Chambolle Musigny: two Grands crus produced under the appellation Chambolle Musigny : Musigny and Bonnes Mares.
Village of Vougeot : famous for its castle which houses the brotherhood of Chevaliers du Tastevins (Knights of the Tastevin). The château of Clos Vougeot was founded by the monks of Citeaux in the Twelfth century. One famous Grand cru: le Clos Vougeot.
Village of Vosne-Romanée: The name Romanée reminds us of the foundation of this vineyard by the romans. It has seven Grands crus: la Romanée-Conti, on 1ha80a, with a production of 6500 bottles. Wine with a violet bouquet, with a hint of cherry, shiny rubis robe, smoothness with extraordinary finness. La Romanée Saint vivant, Richebourg, la Tache, Les Grands Echézeaux, les Echézeaux.
Village of Nuits-Saint-Georges: Wines sold under Nuits or Nuits-Saint-Georges appellation.
Village of Prissey, Comblanchien and Corgoloin: Wines sold under the Côte de Nuits Village appellation.
In this region the types of wines are more diversified. It is where all the white Grands crus are.
Village of Ladoix-Serrigny: Red and white wines sold under the following appellation: Corton. Reds as well sold under the appellation Côte de Beaune Village. Whites and reds sold under the appellation Ladoix.
Village of Aloxe-Corton: Charlemagne here owned plots. Emperor Othon as well (hence the name: Corton =Curtis of Othon =estate of Othon). Citeaux abbey owned plots here too. Two Grands crus: le Corton (the Dukes of Burgundy and the Kings of France owned five hectares in this plot). Next Grand cru: Corton-Charlemagne.
Village of Pernand-Vergelesses: Wines sold under the following appellation: Corton, Corton Charlemagne, Côte de Beaune Village (red and white).
Village of Savigny-lès-Beaune: Red and white sold under the appellation Savigny.
Village of Chorey-lès-Beaune: Red, appellation: Chorey.
Town of Beaune.Really the capital city of Burgundy wines. A lot of cellars were dug within its ramparts by convents, churches or abbeys that wanted to keep their wines in a safe place. The highlight in Beaune is its Hostel Dieu (Hospices de Beaune), a hospital founded in 1443 by Nicolas Rolin, Chancelor of Duke of Burgundy Philippe le Bon, and by his wife, Guigone de Salins. The Hospices de Beaune owns 50 hectares of vineyards. The charity auction sales of the wines of the Hospices taking place on the third Sunday of November continues the work and the spirit whished by the hospital founder, Nicolas Rolin.
The Beaune appellation covers 538 hectares of vineyards, of which 95 percent of red.

Village of Meursault: Probably the first romans settlement in the region. Chardonnay is king here. Among the most famous white wines in France.
Village of Puligny-Montrachet: White wines. five Grands crus: Montrachet, Chevaliers-Montrachet, Bâtard Montrachet, Bienvenue Bâtard-Montrachet, Criots Batard Montrachet.
Village of Saint-Aubin: Appellation Saint-Aubin. Red and white.
